Recipe: Beefed Up Ramen

Beefed Up Ramen

Another recipe that doesn’t really yield pretty pictures, but I promise it’s yummy. Like most 20-somethings I know, one of the items that can generally be found in our pantry is Ramen noodles. Usually beef flavor, occasionally chicken. And while I enjoy a good bowl of just plain noodles & broth, sometimes it’s nice to add a bit more heft and variety to the dish. Enter this recipe, courtesy of Ian.

Beefed Up Ramen

(ha ha, I’m so punny)

  • 1 lb. lean stir fry beef*
  • 1 large crown of broccoli
  • 3 packets of beef flavored Ramen noodles
  • Soy sauce
  • Chinese Five Spice Powder (like this)
  • 5-6 cups of water (depending on how watery/broth-y you like your noodles)

*Make sure you get STIR FRY beef and not STEW beef; we made that mistake once and it was super tough and chewy.

  1. Start heating the water in a large saucepan. Cut broccoli florets off of crown, add to saucepan.
  2. While water is heating to a boil, add beef to a skillet, sprinkle liberally with the soy sauce and 5-spice, and brown. Drain grease when done.
  3. Once water is boiling, add the Ramen noodles. Cook according to package directions.
  4. Add in flavor packets and beef, stir, and serve.
  5. Enjoy your marginally more nutritious than plain Ramen meal! 😉
